Well folks, I am hungry and with the snow outside there is no walking anywhere..LOL Naturally though when  a body is hungry everywhere you go, they show you food so here is something I just found that looks very yummy...

Happy Salivating!!

5 "MUG" recipies

Make-Ahead Lemon-Glazed Blueberry Mug Muffins
    Prep Time 10 min
Total Time 6 hr 15 min
    Servings 12

These freeze-ahead lemon-glazed blueberry muffins can be made one at a time in the microwave! The individual, preportioned servings satisfy those spur-of-the-moment blueberry muffin cravings!

Ingredients
Muffins

1  box (16.9 oz) Betty Crockerâ„¢ wild blueberry muffin mix

Water, oil and eggs called for on muffin mix box

Lemon Glaze (for one muffin)

2  tablespoons powdered sugar

1/8  teaspoon finely grated lemon peel

1/2  teaspoon fresh lemon juice

Directions

Place paper baking cup in each of 12 regular-size muffin cups. Spray insides of paper baking cups with cooking spray. Drain Blueberries (from muffin mix); rinse and set aside. In medium bowl, stir muffin mix, water, oil and eggs just until blended (batter may be lumpy). Gently stir in blueberries.

Spoon batter evenly into muffin cups. Freeze until completely frozen, about 6 hours. Remove from muffin cups, and place into two 1-gallon freezer bags, removing as much air as possible. Freeze up to 3 months.

To make one mug muffin, spray bottom of microwavable mug (about 12 oz) with cooking spray. Remove paper baking cup from frozen muffin batter, and place muffin batter in bottom of mug. Microwave uncovered on High 45 to 60 seconds or until muffin is set on top and edge pulls away from side of mug. Let stand 1 minute.

In small bowl, mix Lemon Glaze ingredients until thin enough to drizzle. Drizzle on top of warm muffin, and serve out of mug OR turn muffin onto small plate, and drizzle with lemon glaze before serving.

Upside-Down Mug Cheesecake

Customize as you like with your favorite toppings.
10 min Prep Time
Total Time 2 hr 20 min
Servings 1

Ingredients

2 oz cream cheese, softened

2 tablespoons fat-free egg product

1  1/2 teaspoons heavy whipping cream

2 tablespoons sugar

3/4 teaspoon all-purpose flour

1/4  teaspoon grated lemon peel

1  tablespoon crushed graham crackers

Additional toppings, if desired (fresh berries, whipped cream, caramel sauce)

Directions

Spray bottom of microwavable mug (about 12 oz) with cooking spray. In small bowl, beat cream cheese, egg product and whipping cream with whisk until smooth; add sugar, flour and lemon peel, and mix well.

Pour batter into mug. Microwave uncovered on Medium (50%) 1 minute 30 seconds, checking and adding an additional 10 to 20 seconds as necessary, until edge slightly pulls away from mug and top is nearly set (cheesecake center may look glossy); cool 10 minutes. Refrigerate until cool, at least 2 hours or overnight.

To serve, carefully run knife around edge of cheesecake to loosen; turn onto small plate. Top with crushed graham crackers. Serve with additional toppings, as desired.

Hints:

Best served chilled. To speed up the chill time, place in freezer 10 to 15 minutes.

Don’t have fat-free egg product in your refrigerator? Instead, beat 1 egg, and measure out 2 tablespoons. Either discard the remaining egg, or save for another use.

Be sure to cook at 50% power. Microwave ovens vary in cook times, so please start with the minimum cook time, and add time as necessary.

Spraying only the bottom of the mug with cooking spray will make sure that your cheesecake gets the proper height during microwaving.

S’mores Mug Brownie
10 min
Total Time 12 min
Servings 1

Ingredients

1/3  cup dry Betty Crockerâ„¢ fudge brownie mix (from 18.3-oz box)

1 tablespoon fat-free egg product

1  tablespoon vegetable oil

1   teaspoon water

2   tablespoons miniature marshmallows

2   teaspoons crushed graham crackers

1   teaspoon miniature semisweet chocolate chips

Directions

Spray bottom of microwavable mug (about 12 oz) with cooking spray. In small bowl, mix brownie mix, egg product, vegetable oil and water.

Spoon batter into mug. Microwave uncovered on High 40 to 50 seconds or until top is set and toothpick inserted in center comes out almost clean; immediately top with marshmallows, graham crackers and chocolate chips.

Let stand about 1 minute to allow marshmallows to soften before serving. Best served warm in mug.

Tips:
Spraying only the bottom of the mug with cooking spray will make sure that your brownie gets the proper height during microwaving.

If you prefer more gooeyness, you can top your brownie with marshmallows and chocolate chips, and pop back in the microwave on High for an additional 5 to 10 seconds, until marshmallows start to soften. Top with graham crumbs, and enjoy.

Upside-Down Mug Pumpkin Pie
    Prep Time 10 min
Total Time 2 hr 20 min
    Servings 1

Ingredients

1  egg

1/3   cup canned pumpkin (not pumpkin pie mix)

1   tablespoon heavy whipping cream

2   tablespoons packed light brown sugar

1   teaspoon all-purpose flour

3/4    teaspoon pumpkin pie spice

1    tablespoon crushed cinnamon graham crackers

    Whipped cream, if desired

Directions

Spray bottom of microwavable mug (about 12 oz) with cooking spray. In small bowl, beat egg, pumpkin and whipping cream with whisk; add brown sugar, flour and pumpkin pie spice, and mix well.

Pour batter into mug. Microwave uncovered on Medium (50%) 3 minutes; if needed, microwave in additional 15-second increments, until edge slightly pulls away from mug and top is nearly set. Cool 10 minutes. Refrigerate until cool, at least 2 hours or overnight.

To serve, carefully run knife around edge of pumpkin pie to loosen; turn onto small plate. Top with crushed cinnamon graham crackers. Top with whipped cream.

**Crushed gingersnap cookies are a nice topping substitute for crushed cinnamon graham crackers in this recipe.**

Cinnamon-Banana-Nut Mug Muffins
    Prep Time 10 min
    Total Time 15 min
    Servings 2

Ingredients

1/3  cup Original Bisquickâ„¢ mix

3   tablespoons sugar

1/4   teaspoon ground cinnamon

1/2  mashed ripe banana (about 1/4 cup)

1  tablespoon melted butter

1  tablespoon fat-free egg product

1/8  teaspoon vanilla

1  tablespoon chopped unsalted nuts (pecans, walnuts)

Directions

Spray bottoms of 2 microwavable mugs (about 12 oz each) with cooking spray. In small bowl, stir Bisquick mix, sugar, cinnamon, banana, melted butter, egg product and vanilla until mixed well. Stir in nuts.

Divide batter equally into mugs (about 1/3 cup batter each). Microwave one at a time uncovered on High 45 to 60 seconds or until muffin top is set and edge pulls away from side of mug; let stand 1 minute before serving.

Serve warm directly from mugs. If desired, serve with butter.
